No Neon Cheese Here!

French cheese is not bright orange; there are some, such as mimolette, which are colored naturally with annatto. Even it has a depth of color unlike the neon American cheeses at the supermarket. Most aged French cheese is not white, either, but hay-colored or golden, which comes from the beta carotene in the grass the animal eats. It’s a scam to artificially color any food–it means someone is trying to pull the wool over your eyes.
