He starts by slicing apples thin on a mandoline, and then he stacks them tall on a baking sheet filled with dark caramel and puts them in the oven on low heat. For several hours, he bastes them with vanilla syrup until they are cooked to taste. He chills them and slices them to glaze, which is the phase you see here. These candied apples are then placed on a precut, precooked pastry on a plate, a la mode!
