Puff Pastry Appreciation

This belongs under the category of “don’t try this at home.” Bien sur, mon amour’s puff pastry is homemade. It begins like any pastry dough, but then a layer of butter is placed on top. The dough is folded over the butter, and rolled out again. It is folded and rolled for a total of six times. Between each rolling, it rests in the refrigerator for a while (the dough with three dots below shows the third rolling). Next time you have a croissant, pain au chocolat (chocolate croissant), or a slice of tarte Tatin (see “How to Make Tarte Tatin”), spend a moment of silence…
