To Brine or Not to Brine

We are brining; use equal parts’ salt and sugar (about one cup salt and sugar to one gallon water), and make sure the turkey is completely immersed (in any container in which it will fit!). Leave it for up to two days.

Truc (Tip): You can boil some water to dissolve the salt and sugar ahead of time and include aromatics, such as thyme, bay leaves, a lemon cut in half, whole garlic cloves, fennel seed, peppercorns, etc. Allow the liquid to cool completely before adding the turkey.
