During this time of holiday entertaining, it’s nice to make an extra effort. This salmon tartare that mon amour made is as delicately delicious as it looks. For an easier dish that requires less prep time, rim a plate with cucumbers, as above, and pile up smoked salmon in the middle. Garnish with lemon slices and creme fraiche instead of quail egg yolks and caviar. Serve with crusty bread. On a small scale, this could be the first course for a dinner party, and on a large scale a party platter.

Truc (Tip): This can be made ahead and kept in the refrigerator until ready to eat!
