Nut Candy

You can candy nuts for snacking, gifting in a pretty wrapper, garnishing ice cream or yogurt…

First, make some simple syrup by bringing to a boil equal parts of sugar and water. Cool to warm, and add nuts; allow to macerate for a few hours. Drain and spread on a Silpat nonstick baking mat, which you can purchase here:

Or you can use parchment paper to prevent sticking. Make sure the nuts are not touching each other, either. Roast in a 350-degree oven until toasted and crunchy. Cool completely before packaging.
