What is farro?

Farro is a grain similar to barley, but with more bite. It has been found in ancient Egyptian tombs, but is just making its way back to our tables… We love its nuttiness and chewiness, which makes it a good choice for salads. Rather than cooking it in salted water, try some kind of stock. Cool and finish with a vinaigrette (see my post “A Simple Vinaigrette”) and fresh tomatoes and parsley, for example.
