These little cookies are gluten-free—made with almond flour. They are traditional treats from Algeria, called m’chekek, and are addictive. I challenge you to eat only one!
4 egg whites
4 cups almond flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon vanilla or almond extract
For decorating: candied blanched almonds (see my “Nut Candy” post) or blanched whole or slivered almonds and sugar
Preheat oven to 350 degrees F (180 degrees C). Mix together all ingredients until combined. Form small balls, roll in sugar, and press an almond into each center. Bake for about 15 minutes, or until golden on bottom.
Truc (Tip): You can replace the almond or vanilla extract with orange blossom water for a more exotic flavor.
