On the third day of buche de Noel, you will make decorations for your cake.
You can find recipes for meringue mushrooms on the Web, like this one:
But I prefer the easier marzipan ones, which have a more natural mushroom color. Simply buy marzipan and use like clay to mold mushroom stems and caps, stick together, and dust with cocoa.
You can also tint marzipan with colorant. Mix in a little green and roll out flat (on Silpat or parchment paper), and then cut out leaf shapes with a knife. Use red and roll into tiny balls like holly berries, or use pomegranate seeds. Be creative!
Melt some chocolate and drizzle designs from a spatula or knife onto parchment paper. When cool, remove hardened shapes carefully.
Seal all decorations in a plastic container.
Truc (Tip): This is a fun project for kids, and adults for that matter, so recruit some help in the kitchen!
