The unassuming oyster bar in Saint-Germain, Huitrerie Regis, is bright and cheerful inside, with a few tables lining the sidewalk outside. We had some Fines de Claires and Speciales de Claires with Chablis, of course. They were served with lemons, mignonette sauce (vinegar, black pepper, and shallots), and bread and butter. The owner, who was there, said he drives to Normandy every morning to buy fresh oysters. What a beautifully refreshing lunch!
