The galette des rois, or king cake, is in every boulangerie in Paris at the moment. It is prevalent between Christmas and the Epiphany (January 6), and in Christian tradition was meant to draw the kings to Jesus.

The flaky puff pastry has many layers from brown and crunchy on the outside to soft and buttery on the inside–like a croissant. In the traditional gateau, there is a layer of frangipane, or almond cream, in the middle, along with a little token. The custom is that he who finds the token in his piece gets to be king for the day–but the truth is that anyone will feel like a king eating this delectable delicacy…
