La Galette des Rois

The galette des rois, or king cake, is in every boulangerie in Paris at the moment. It is prevalent between Christmas and the Epiphany (January 6), and in Christian tradition was meant to draw the kings to Jesus.

The flaky puff pastry has many layers from brown and crunchy on the outside to soft and buttery on the inside–like a croissant.
