Fussy with Your Wine?


We had this 2002 Clos de Monsieur Noly Domaine Valette Pouilly-Fuisse in a wine pairing with dinner at Astrance. It was served with truffles and parmesan in two courses: one was a watercress “soup” and the other was chicken with chard and sage (see my post “Follow the Yellow Brick Road”). This straw-colored chardonnay held up to the depth of flavor and earthiness of each dish with its honeyed richness, while adding some acidity and oxidation to elevate the experience.

Truc (Tip): I strongly recommend wine pairings with tasting menus, because you get to try unusual wines and ones that especially highlight the plates.
