The poulet de Bresse is from a specific region in France (Rhone-Alpes). It’s almost impossible to find it in the U.S., but I encourage you to buy pastured or organic chicken. Organic chickens have not been given antibiotics, which means they had to have led a somewhat healthy life. We buy and roast Bresse chickens when in France, and they are the juiciest, most flavorful fowl we have found. It makes sense, because they are raised on small farms–with a minimum of ten square meters for each bird–and have to meet a quality standard, or the Appellation d’Origine Controlee (AOC).
