Roasted Red Peppers

Roasting red peppers is easy! You can add them to salads, pasta, omelets; or serve them with “A Simple Vinaigrette” (see post) as a Spanish tapa along with Manchego and Cabrales cheese, membrillo (quince paste), jamon serrano and/or chorizo sausage, gambas al ajillo (shrimp sauteed with garlic), and olives.
