Winter Whites

Time to bring out your winter whites–white wines, that is… We find that whites are often served too cold. If you do not have a wine refrigerator, take the wine out of the fridge, which is in the upper 30s F, for twenty minutes or more before drinking, which should raise its temperature to the ideal lower 50s. I suggest you leave it out, as well, and see how it changes as it warms. This is especially essential for richer white wines, such as aged chardonnay, Burgundy, and Savennieres.
