Cooking cauliflower like this is as simple as one, two, three…

One: Cut the stem as short as possible and remove any remaining green leaves.

Two: Fill a pot with half an inch of water, a sprinkling of salt, and a splash of olive oil. Place the whole head in the pot, drizzle with olive oil, and season the top. Simmer with the lid on for 10 minutes.

Three: Remove the lid and place in a 400-degree F oven for another 20 minutes or until soft enough to serve with a spoon.

Truc (Tip): Break up the leftovers and brown in a bit of olive oil with capers and anchovies for a tasty antipasti.
