Foie Gras Creme Brulee


Yes, you did indeed read that right–foie gras and creme brulee at crosscurrents. Mon amour sent this surprise savory dish to me at the restaurant, and I was swept away! Imagine the satisfaction of cracking through the caramelized sugar crust to discover the smooth foie gras mousse under the surface. And to top that, there were candied pistachios (see my post “Nut Candy”) anchored in the brulee. The combination of the sweet nutty crunch and salty melting cream in your mouth fills you with a sense of balance. Don’t you wish you could dive in?

  1. I remember having a rather good foie gras ice cream to accompany a duck salad a couple of years ago in Bergerac. It was surprisingly delicious. I quite fancy foie gras crème brûlée now too!
