The Blue Duck Tavern in Washington is not your typical hotel restaurant (it’s located in the Park Hyatt). From the farms listed on the menu to the simple Shaker-style tables, it is very down to earth. The wood-fired oven glows from the kitchen and adds a smokiness to the air as well as the food. This is hearty fare filling enough for chopping wood, and refined enough to satisfy any foodie…

We had the garlicky bone marrow–an absolute must–to start; this is one of their specialties. From there, we moved on to beef tartare, and then duck breast and duck confit with turnip mostarda, and suckling pig with baby vegetables, along with a beautiful young Burgundy to cut through all the fat. For dessert, we paired an uncommonly creamy chocolate pot de creme with Banyuls, and shared a nostalgic lemon ice box cake.
