What can you serve for Mother’s Day dessert for your very deserving mum? We are starting to see berries, such as strawberries, at our local farmers’ market, and they look brilliant! You could make something as simple as strawberries and cream, but if you want to create a truly delicious dish try a trifle. Just layer sherry-soaked genoise (sponge cake–see my post “On the second day of buche de Noel…”), fresh macerated berries, egg custard, and creme Chantilly (sweetened and/or flavored whipped cream). Splash some rose water into the whipped cream for a whimsical, as well as traditional, touch. You can also spread jam on the cake or sprinkle toasted nuts on top, or both. Let set for several hours in the refrigerator after assembling. See basic recipes here:
