In Kokotxa, a one-Michelin-star restaurant in San Sebastian, Spain, our spirits were lifted!

At the top of the market menu was a smoked salmon sandwich and gazpacho with cured sardine.

And then sous vide prawns in a white garlic sauce with blood oranges emerged.

Pickled fresh beans with confit of cod and a purple potato tuile were up next.

And then we had a heavenly local fish with tomato gel and grilled eggplant.

The last savory dish in the procession was duck breast with a hazelnut crumble, smoked pear puree, and balsamic beets.

Dessert was a divine lemon pie.
